Ingredients
To prepare Tandoori Chicken for four people, you will need:
1 kg chicken leg pieces
1 cup thick yogurt
2 tablespoons ginger-garlic paste
3 tablespoons fresh lemon juice
2 tablespoons cooking oil
2 teaspoons red chilli powder
1 teaspoon Kashmiri red chilli powder
1 teaspoon coriander powder
1 teaspoon cumin powder
Half teaspoon turmeric powder
Half teaspoon garam masala
1 teaspoon tandoori masala
Half teaspoon black pepper powder
Salt according to taste
1 tablespoon butter
Fresh coriander for garnishing
Onion rings and lemon wedges for serving
Preparation and Marination
First, wash the chicken pieces properly and drain the extra water. Make two or three deep cuts in each piece. These cuts help the marinade enter the chicken and allow the spices to spread throughout the meat.
Take a large mixing bowl and add thick yogurt, ginger-garlic paste, lemon juice, cooking oil, red chilli powder, Kashmiri chilli powder, coriander powder, cumin powder, turmeric powder, garam masala, tandoori masala, black pepper, and salt.
Mix all the ingredients until you get a smooth and thick mixture.
Now add the chicken pieces to the bowl. Coat every piece properly with the prepared marinade. Make sure the mixture also enters the cuts.
Cover the bowl and place it in the refrigerator for at least three to four hours. If you have enough time, marinate the chicken overnight. Longer marination helps develop a richer flavour easy to cook and gives the chicken a softer Juicy tenderize texture.
Cooking Method
Take a heavy grill pan or non-stick frying pan and heat it over medium flame. Add a little cooking oil to prevent the chicken from sticking.
Carefully place the marinated chicken pieces in the pan. Do not overcrowd the pan because the pieces need enough space to cook evenly.
Cook the chicken on medium-low heat and turn the pieces occasionally. Cover the pan with a lid to help the chicken cook properly from inside.
Continue cooking until the chicken becomes tender. Brush a little butter over the pieces to add richness and improve their flavour and you will always enjoy your passion work because its your skill if you enjoy your work its a key of success ok now we comeback our recipe.
Once the chicken is nearly cooked, increase the heat slightly to give it a beautiful roasted and slightly charred appearance. Always check that the thickest part of the chicken reaches an internal temperature of 74°C before serving.
For an extra smoky restaurant-style flavour, you can use the charcoal-smoking technique. Place a small piece of hot charcoal in a heatproof bowl inside the cooked chicken dish. Add a few drops of oil to the charcoal and immediately cover the dish for two minutes. This gives the chicken a lovely smoky aroma.
